Freeze-Dried Food Basics: Real Food Made Simple

If you’ve ever been curious about freeze-dried foods but weren’t sure where to start, this class will give you a clear and practical foundation. Freeze-dried foods are becoming more popular, but many people don’t realize how simple they are to use in everyday life.
In this workshop, you’ll learn what freeze-dried food is, how it compares to other food preservation methods, and why it works so well for both convenience and quality. We’ll walk through how to re-hydrate foods, when you don’t need to, and how to start incorporating freeze-dried ingredients into meals, snacks, and pantry staples.
Christine, along with her husband and sister, has spent the past five years freeze-drying food for their families and business. What started as a way to store food has grown into a practical system for simplifying meals and reducing time in the kitchen—without sacrificing real ingredients.
This class focuses on simple, real-life use—because “instant” doesn’t have to mean processed. You’ll leave with ideas you can start using right away, whether you’re looking to save time, reduce waste, or just make meals a little easier.

Christine Lunceford is the co-founder of Oh My Goodness Farm, a small family business focused on helping people use freeze-dried foods and simple, real-food solutions in everyday life. She works along side her sister, Autumn, and her husband, combining their shared passion for practical, healthy living.
Together, they have been freeze-drying food for the past five years. What started as a way to store food and reduce waste for their own families has grown into a business where they teach others how to use freeze-dried ingredients in meals, snacks, and pantry cooking.
Christine enjoys helping others discover that real food doesn’t have to be complicated—meals can be quick, convenient, and still made with simple, wholesome ingredients.
Seven Short Stories in Six Weeks
with Matt Powell
Short stories go a long way. A well-written short story can shock us, challenge us, or force us to examine our own lives. In this engaging summer course, we will look at seven classic short stories, discussing theme, character, metaphor, and the context of the work in the writer’s life. Selections will include stories by classic writers, including Jack London, Flannery O’Connor, and Leo Tolstoy. All materials will be provided.
Instructor Bio:
Matt Powell is a locally based writer and musician. His work has been featured in multiple national publications, including Variety, No Depression, and Angels Flight-literary west. He taught the comparative literature class, The Language of the River, at ASUMH last Spring.
Fine Art Painting Class
with Diane Hoppmann
*Last day to register for class Monday June 22nd.
The painting class taught by a professional artist helps students develop both technical skills and personal artistic style. Students create original paintings using still life, photography, and imagination as inspiration. Instruction covers color theory, brush techniques composition and an overview of historical painting styles as they relate to a modern world. Students will also be offered the option of a creating a 9” x 9” liquid lead glass project/ faux stained glass in plexi glass or painting on canvas.
*Must be 16 or older.
*There is a $6 material fee. Please bring $6 to instructor at the beginning of class.

Instructor BIO:
Diane Hoppmann's larger scale impressionistic paintings are inspired by a heightened sensitivity to nature's changing light,color and atmospheric conditions in the Ozarks. She spends much of her time immersed in the landscape, observing flowing creeks and rivers, foliage reflections and shifting patterns of wind and water on the lake. Diane describes this experience as"Being Home."
Painting allows her to transfer the tranquil observations into the perfect balance of composition, shape, perspective and color while escaping into a peaceful and safe emotional space.
Diane Hoppmann was born in Madison, Wisconsin and currently lives in Mountain Home, Arkansas. She graduated from the Corcoran School of Art in Washington, D.C. earning a B.F.A. She also attended the Post Bachelorette program at the School of the Art Institute of Chicago and graduated from New York University in New York City with an M.A.
Diane Hoppmann then continued to paint and show her work while starting her own successful decorative painting business in New York and Washington, D.C. for the next thirty years.
Her featured exhibitions and clients include East Hampton Center for Contemporary Arts, Adrian Arscht, Eileen Fisher, Ralph Lauren Home and Hertz Worldwide Corporate headquarters. Diane has also shown with local shows such as The Art Odyssey, Springfield Airport 'Sky Gallery" and ASUMH Art Gallery.
Freeze-Dried Food for Travel, Camping & Summer Fun

Summer is made for getting outside—road trips, lake days, ball games, camping, and everything in between. This workshop is all about making food one less thing to worry about by using freeze-dried foods as simple, real-life solutions for your summer activities.
Participants will learn how to build easy grab-and-go snack kits, pack lightweight meals that don’t require refrigeration, and keep food simple whether you're traveling across the state or heading out for the day. We’ll cover practical ideas for family trips, kid-friendly options, and ways to avoid relying on convenience store food while still keeping things quick and easy.

Herbal Soaks & Liniments: with the Walking Stick Herbalist
with Robin Moore
Herbal soaks offer therapeutic relief by combining warm water with botanicals to reduce stress, relax muscles, improve circulation, and soothe skin conditions. Herbal liniments, also topically applied, use herbal tinctures or oil-based solutions that penetrate quickly into the skin for rapid relief of pain and inflammation. This method increases local blood circulation, promotes healing to muscle aches, sprains, bruises, and arthritis.

I am Robin Moore, Certified Community Herbalist, a Native of Fulton County Arkansas. I am a wife, Mother, Grandmother and Friend to many with over 30 years of experience using and teaching about herbs. I learned food preservation, homesteading skills and Folk medicine traditions from family and mentors, studied under several Herbalist including Matthew Wood, Phyllis D. Light and I attended the Appalachian Center for Natural Health (ACNH).
I continue to pass on the Traditional ways of using local plants to support health, connect with nature and build Community, these relationships are essential for nurturing our mind, body and spirit. I hope to inspire you to learn and pass on these traditions to future generations.
